Russian nutrition experts have highlighted parsley as one of the most beneficial vegetables for the elderly, due to its richness in vitamins and dietary fiber that support digestive health and immunity. However, they also cautioned against its consumption in specific health conditions.

Dr. Yevgeny Arzamascev, a nutrition specialist, explained that parsley contains high levels of vitamins C and K, along with essential dietary fiber. These nutrients play a crucial role in improving digestive function, strengthening the immune system, and regulating blood circulation.

He noted that the fiber in parsley supports gut microbiota, enhances intestinal motility, and improves digestion processes, while also helping to reduce harmful cholesterol levels in the body.

Vitamin C, according to Arzamascev, boosts immune defenses, while vitamin K significantly contributes to blood clotting and the regeneration of cells. This makes parsley particularly beneficial for seniors who face issues with blood viscosity or difficulty in stopping bleeding.

On the other hand, Dr. Arzamascev warned against parsley consumption in certain medical conditions. Individuals with allergies or parsley intolerance, as well as those suffering from exacerbated digestive disorders or gallbladder and bile duct problems, should avoid consuming it.

Meanwhile, Dr. Alexander Surzhik, another nutrition expert, pointed out that parsley, alongside turmeric, spinach, legumes, dried fruits, nuts, and seeds, is among the foods that help maintain joint health.

These recommendations were part of a report published by the Russian news outlet Gazeta.ru, focusing on foods that promote overall health in old age.
